Apple Crumpet Bread Pudding:

6 crumpets (1 pkg), soak in ½ c of milk

3 eggs

1.5 tsp cinnamon

1 tsp vanilla

1 tsp nutmeg

** Apple topping       ( 40 minutes)

3 apples peeled

3 tbsp cornstarch

1 c light brown sugar

½ c dark brown sugar

** Nut topping  ( 10 minutes)

1.5 c pecans

½ c light brown sugar

1 c maple syrup

½ c oats

1 stick butter
